In a bowl, whisk together eggs, milk, salt, and pepper. Heat butter in a nonstick pan over medium heat. Pour in the eggs and cook gently, stirring until softly scrambled.

Lay a tortilla flat. Sprinkle some cheese in the center, then add a spoonful of scrambled eggs. Add extra toppings if desired.

Roll up the tortilla tightly. Place seam-side down in a hot skillet for 1–2 minutes per side until golden and the cheese melts.

Cut in half and serve warm. Great for breakfast on the go.
