Preheat oven to 200°F. Line a baking sheet with aluminum foil and coat with non-stick spray. Place a cooling rack on the baking sheet and spray with non-stick spray.

Melt butter, sugar, and water together in a large saucepan over medium heat. Stir constantly as the mixture comes to a boil. Continue cooking, stirring, until the mixture reaches 305°F on a candy thermometer. Remove from heat and blend in vanilla extract.

Add mini pretzels to the caramel mixture and stir gently to ensure all pretzels are evenly coated.

Arrange coated pretzels on the prepared rack. Bake for 20–30 minutes to allow the caramel to set and pretzels to dry.

Remove from oven and allow pretzels to cool completely on the rack before serving.
