Preheat the oven to 375°F.

Slice pears in half lengthwise, remove cores, and if necessary, trim the bottoms so the halves sit flat.

Place pear halves cut-side up in a baking dish and top each with a small pat of unsalted butter.

Transfer pears to the oven and bake for 20 minutes, or until the flesh is fork-tender and golden.

While pears roast, combine cranberries and honey in a small saucepan over low heat. Simmer gently until the cranberries begin to burst and soften.

Remove baked pears from the oven and allow them to cool slightly. Spoon goat cheese into the center of each pear half.

Spoon the cranberry mixture over the goat cheese. Drizzle with additional honey if desired.

Sprinkle with ground cinnamon and fresh mint leaves if desired. Serve warm or slightly chilled.
