Preheat the oven to 400°F (200°C).

Combine cherry tomatoes, diced bell pepper, red onion, and minced garlic in a baking dish. Place feta cheese at the center. Drizzle olive oil over the feta and vegetables.

In a small bowl, stir together dried oregano, dried thyme, black pepper, red pepper flakes, and sea salt.

Place the baking dish or ramekins on a baking sheet and bake for 25 minutes.

Remove from oven, stir to evenly distribute feta with the vegetables, then add chopped spinach and mix until combined.

Create four wells in the mixture, crack an egg into each well.

Return to oven and bake for an additional 10 minutes until eggs are set to desired doneness.
