# What You Need:

01 - 2 cups cherry or grape tomatoes
02 - 1 red bell pepper, diced
03 - 0.5 cup red onion, diced
04 - 1 cup chopped fresh spinach

# How to Make It:

01 - Preheat the oven to 400°F (200°C).
02 - Combine cherry tomatoes, diced bell pepper, red onion, and minced garlic in a baking dish. Place feta cheese at the center. Drizzle olive oil over the feta and vegetables.
03 - In a small bowl, stir together dried oregano, dried thyme, black pepper, red pepper flakes, and sea salt.
04 - Place the baking dish or ramekins on a baking sheet and bake for 25 minutes.
05 - Remove from oven, stir to evenly distribute feta with the vegetables, then add chopped spinach and mix until combined.
06 - Create four wells in the mixture, crack an egg into each well.
07 - Return to oven and bake for an additional 10 minutes until eggs are set to desired doneness.
08 - Optional: top with chopped herbs or sliced chives. Serve with crusty bread, toast, or pita.
