Autumn Tortellini Soup Sausage (Recipe for Printing)

01 - 1 pound Italian sausage, casings removed
02 - 1 tablespoon olive oil
03 - 1 medium onion, diced
04 - 2 cloves garlic, minced
05 - 2 carrots, peeled and sliced
06 - 2 cups butternut squash, peeled and cubed
07 - 6 cups chicken broth
08 - 1 package (9 ounces) cheese tortellini
09 - 2 cups baby spinach
10 - 1 teaspoon dried thyme
11 - Salt and black pepper, to taste

# How to Make It:

01 - In a large pot, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon until browned and fully cooked. Drain excess fat as needed.
02 - Add diced onion, minced garlic, carrots, and cubed butternut squash to the pot. Sauté for 5 minutes, stirring frequently, until the vegetables start to soften.
03 - Pour in chicken broth and add dried thyme. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes or until the vegetables are tender.
04 - Stir in cheese tortellini and baby spinach. Cook for 2–3 minutes, or until the tortellini is heated through and the spinach is wilted. Season with salt and pepper according to taste.
