Preheat oven to 400°F (200°C).

Wash and scrub potatoes. Halve or quarter them into even-sized pieces.

In a large bowl, whisk together olive oil, lemon juice, garlic, vegetable broth, oregano, salt, and pepper.

Toss the potatoes in the marinade until fully coated. Let them sit for 10 minutes.

Transfer potatoes and all the liquid to a baking dish, cut side down. Roast uncovered for 40 minutes.

Flip the potatoes, baste with pan juices, and roast for another 20–25 minutes until golden and crisp.

Garnish with fresh parsley if desired. Serve hot.
