Authentic Greek Potatoes (Print Version)

# Ingredients:

01 - 2.5 lbs Yukon Gold potatoes
02 - 1/3 cup extra virgin olive oil
03 - 4 cloves garlic, minced
04 - 1/3 cup fresh lemon juice
05 - 1 cup vegetable broth
06 - 1.5 tsp dried oregano
07 - 1 tsp salt
08 - 1/2 tsp black pepper
09 - Fresh parsley, for garnish (optional)

# Instructions:

01 - Preheat oven to 400°F (200°C).
02 - Wash and scrub potatoes. Halve or quarter them into even-sized pieces.
03 - In a large bowl, whisk together olive oil, lemon juice, garlic, vegetable broth, oregano, salt, and pepper.
04 - Toss the potatoes in the marinade until fully coated. Let them sit for 10 minutes.
05 - Transfer potatoes and all the liquid to a baking dish, cut side down. Roast uncovered for 40 minutes.
06 - Flip the potatoes, baste with pan juices, and roast for another 20–25 minutes until golden and crisp.
07 - Garnish with fresh parsley if desired. Serve hot.

# Notes:

01 - Serve with grilled lamb, chicken souvlaki, or spanakopita for a complete Greek meal. Reheat leftovers in the oven to restore crispness.
